| Tóm tắt | The fermentation of cigar-leaf tobacco is a carefully controlled industrial process and has been the subject of many investigation during the past 100 years. It has been learned that two of the chemical change of greatest significance in fermentation are the decrease in nicotine content and increase niacin content of the leaf. The account for these and other chemical changes that take place, three theories have been advanced. Some workers have maintained that the chemical reactions taking place in the cigar-leaf fermentation are not catalyzed by enzymes. Others have taken the position that the enzymes of microorganisms are responsible for the major chemical reactions. The third theory, developed at the turn of the century, attributes to the enzymes of the tobacco plant the major role in fermentation process. Each of these theories has received support in the literature of the last few years. |
